The short answer is metamerism, a phenomenon that occurs when the same object takes on different colors depending on the light source. It can also described as seeing two items as matching in color in one light, but determining their colors are different when viewed in another light.
The scientific reason for these color variations occurs because of the structure of the human eye. With only three types of color receptors, all colors must be reduced to three values.
