After we unleashed our beloved Thanksgiving potpie on the hungry internet, we began dreaming up what else we could layer together and cover in flaky dough. It didn’t take us too long to realize breakfast was an obvious answer.
Once it was out of the oven, we doused it in maple syrup, because it felt like the right thing to do at the time. In every bite of our breakfast potpie, there are tender shredded potatoes, silky scrambled eggs with vegetables (healthy! . . . ish), crisp bacon, cheese and a bite of pillowy biscuit. Trust us, it’s good.
